Amy Toney
- Theology, Ecology, Food Justice Program Manager (Part-Time)
Amy Toney serves as the program manager for the Theology, Ecology, and Food Justice Program at Baylor University’s Truett Seminary. Amy graduated from the TEFJ Master’s Program in the first cohort of this degree at Truett in May of 2024. During her Master’s education, Amy was the Policy and Government Relations Graduate Assistant for Baylor Collaborative on Hunger and Poverty. Amy also has a Bachelor’s Degree from Baylor University in Child and Family Studies, concentrating on historically under-supported adolescents. In her career, Amy has worked with multiple organizations, ranging from children’s homes to school districts and NGOs, both domestically and internationally, seeking to bend the world toward justice – specifically working with women and children affected by human trafficking and those displaced or affected by crises resulting from natural disasters and conflict. Amy’s work within the TEFJ program includes strategic planning, student recruitment and support, financial and logistic administration, research and development, as well as coordination of trips, internships and courses. Amy’s interests lie in the intersection of faith and church life, eco-theology, regenerative agriculture, working with marginalized communities, and education.
Amy is married to Sky and has 2 beautiful daughters, Avery (12) and Olivia (8). They live on a regenerative farm raising cattle, sheep and goats alongside their beautiful livestock guardian dogs. Amy’s husband Sky is a Regenerative Ranching Advisor for The Noble Research Institute. On their farm they also have rabbits, chickens, guinea fowl, and a cat named Leo. Amy enjoys reading on the porch with a cup of coffee (hot or iced), walking their farm and playing games with her family.
